Seed/Plant info: NuMex Big Jim holds the Guinness World Record for the largest chili pepper variety ever grown, with individual pods reaching up to 14 inches long! Thanks to its thick flesh and exceptional length, Big Jim is considered the ultimate pepper for stuffing (ideal for chiles rellenos), roasting, and grilling. The skin blisters evenly under heat, making it easy to peel after roasting for fresh salsas, green chili sauces, or freezing for year-round cooking. Developed at New Mexico State University by Dr. Roy Nakayama in 1975, this heirloom Hatch-style pepper is a favorite for home gardens, farmers markets, and culinary use. Crisp, fleshy, and slightly sweet with a rich, authentic southwestern flavor. Mild heat, ranging from 500 to 3,000 Scoville Heat Units (SHU)—though heat can vary from pod to pod on the same plant. 80+ days to harvest. Capsicum annuum.
